At Casa de Uco, sustainability is understood as a holistic commitment that permeates every aspect of our operation, from environmental stewardship and social responsibility to continuous improvement. Our approach combines concrete daily practices with a long-term vision focused on efficiency and the preservation of the unique natural setting of the Uco Valley.

We are among the first hotels in the region to obtain the Hoteles Más Verdes Certification, Bronze Level, and we continue to strengthen our processes with the aim of achieving ever higher standards.

WASTE MANAGEMENT

Organic Waste and Composting: Vegetable scraps and fruit residues from the kitchen and our organic garden are composted on site. This process returns nutrients to the soil and closes the natural production cycle within the property.
  Vegetable Oil Recycling: Cooking oils are collected and recycled through RBA Ambiental, where they are processed for industrial reuse, primarily in the production of biofuels.
Recycling of Dry Materials: Glass, cardboard, PET plastic, and aluminum are recycled through an agreement with the Municipality of Tunuyán and transferred to a specialized collection center, where they are properly processed for reintegration into the production chain, contributing to the region’s circular economy.
Municipal Solid Waste: General waste is sent to the COINCE treatment plant (Public Consortium for Waste Management Central Zone), the only facility of its kind in the Uco Valley, where it is managed under controlled conditions in compliance with current regulations.
 Reduction of Paper Consumption: Over the past eighteen months, we have reduced paper use by approximately 80 percent through the digitalization of administrative processes, internal communication, and document management. Printing is limited to legally required documentation and specific guest requests.

RESPONSIBLE ENERGY USE

We implement proactive policies for the efficient use of energy across all hotel and winery operations.
The property is equipped with solar panels that generate clean energy. A portion is consumed internally, while the remainder is fed into the public grid. The system is continuously monitored by our maintenance team to ensure optimal performance.

Ongoing initiatives include:

  • LED lighting throughout the property
  • Scheduled shutdown of systems during low occupancy periods
  • Optimization of electricity consumption during the off season
  • Monitoring of energy use by operational area

We are currently implementing a separation of energy consumption between hotel and vineyard operations, allowing more precise measurement and targeted improvement strategies.

WATER STEWARDSHIP

Water is a vital resource in our environment and operations.


Wastewater Treatment

The winery operates a dedicated wastewater treatment system.
The hotel uses an operational biodigester for sewage treatment, significantly reducing environmental impact.

Efficient Use

  • Drip irrigation systems in landscaped areas
  • Timer based programming and soil moisture monitoring
  • Rational pumping and tank refilling according to occupancy
  • Coordinated water use with the vineyard based on seasonal requirements

In addition, rainwater collection reservoirs complement the overall water management system.

OUR ORGANIC GARDEN

Our culinary team works with a private organic garden based on seasonal crop rotation and natural cultivation practices without synthetic pesticides.

The harvest is integrated directly into the gastronomic experience, and any surplus is shared with staff to prevent waste.

We also collaborate with local producers, prioritizing nearby suppliers and, whenever possible, organically grown products.

SOCIAL RESPONSIBILITY

Sustainability also means a deep commitment to the local community. We collaborate with municipal authorities, social organizations, local stakeholders, and community leaders on initiatives that support regional development.

Continuous staff training is promoted in areas such as:

Training programs are reviewed and updated annually based on internal audits and ongoing improvement processes.
